Spinach Souffle Lite
- 1 lb frozen chopped spinach
- 24 ounces low fat cottage cheese
- 2 eggs
- 2 tablespoons bacon bits
- 1 can condensed fat-free cream of mushroom soup
- 14 teaspoon pepper
- parmesan cheese (optional)
- breadcrumbs (optional)
- Heat oven to 350F.
- Thaw spinach and squeeze out water.
- Beat eggs and mix in the condensed soup.
- Combine all ingredients in a bowl and fold until incorporated.
- Liberally grease a baking dish, you really don't want to try to clean this out of an untreated dish.
- Divide into 4 large ramekins for entree portions, 8 or more smaller dishes for side dishes, or into one casserole dish.
- If using Parmesan cheese or bread crumbs (or both), sprinkle them on top.
- Cook at 350 for 30 minutes or until top is bubbly.
