Easy Lemon Mousse Recipe

  1. In medium saucepan combine gelatin, sugar, lemon peel, lemon juice and 1 c. water.
  2. Cook and stir over medium heat till gelatin is dissolved.
  3. Remove from heat.
  4. Stir in 1 c. ice water to chill, stir occasionally.
  5. When gelatin becomes syrupy, beat whip cream to soft peaks.
  6. When gelatin mix is consistency of egg whites, mix in whipped cream.
  7. Pour into mold.
  8. Chill 4 to 6 hrs.
  9. Before serving, let set 15 min.
  10. Unmold dessert.
  11. Fill center with kiwi or possibly raspberries or possibly strawberries.
  12. Serves 8 to 10.
