Easy Lemon Mousse Recipe
- 1 (6 ounce.) pkg. lemon Jello
- 1/4 c. sugar
- 1 teaspoon finely shredded lemon peel
- 2 tbsp. lemon juice
- 1 1/2 c. whipping cream
- In medium saucepan combine gelatin, sugar, lemon peel, lemon juice and 1 c. water.
- Cook and stir over medium heat till gelatin is dissolved.
- Remove from heat.
- Stir in 1 c. ice water to chill, stir occasionally.
- When gelatin becomes syrupy, beat whip cream to soft peaks.
- When gelatin mix is consistency of egg whites, mix in whipped cream.
- Pour into mold.
- Chill 4 to 6 hrs.
- Before serving, let set 15 min.
- Unmold dessert.
- Fill center with kiwi or possibly raspberries or possibly strawberries.
- Serves 8 to 10.
