Gelatin Pinwheels

  1. Spray 8- or 9-inch square pan lightly with no stick cooking spray (2 to 3 short sprays).
  2. Spread cooking spray on bottom and up sides of pan with paper towel.
  3. Mix gelatin and water in 1 1/2 to 2-quart microwavable bowl.
  4. Microwave on HIGH 1 1/2 minutes; stir until completely dissolved.
  5. Add marshmallows.
  6. Microwave 1 minute or until marshmallows are puffed and almost melted.
  7. Remove from oven.
  8. Stir mixture slowly and gently until marshmallows are completely melted and mixture is smooth.
  9. (Creamy layer will float to top.)
  10. Pour into prepared pan.
  11. Refrigerate 45 minutes or until set.
  12. Loosen edges with knife.
  13. Starting at one edge, roll up tightly.
  14. With seam-side down, cut into 1/2- inch slices.
  15. Serve immediately or refrigerate until ready to serve.
  16. Makes 10 to 12 pieces.
