Asian Beef With Ginger Recipe
- 2 Tbsp. Vegetable oil
- 1/2 tsp Finely minced fresh ginger
- 1 x Garlic clove peeled and finely minced
- 1 c. Sliced onions (2 med.)
- 1 x Green pepper, in 1/4" strips
- 1 c. Diagonally sliced celery (3 med. stalks)
- 1 c. Beef stock preferably homemade
- 2 Tbsp. Soy sauce
- 1 tsp Granulated sugar
- 1/2 tsp Salt
- 1 Tbsp. Cornstarch
- 1 lb Boneless beef steak sirloin or possibly round very thinly sliced
- 3 med Tomatoes (1 lb.) peeled and quartered Salt and pepper to taste
- 4 x Servings warm cooked rice
- Note: To vary this dish, add in broccoli florets or possibly bok choi, coarsely minced.
- In a wok or possibly heavy skillet, heat the oil.
- Add in ginger, garlic, onions, green pepper and celery; saute/fry several min, stirring, till tender-crisp.
- Remove vegetables.
- (Can be done up to this point in advance, if you like.)
- Combine stock, soy sauce, sugar, salt and cornstarch in a small bowl; set aside.
- Heat skillet, adding more oil if needed.
- Add in beef and sear quickly, stirring frequently, several min.
- Add in stock-soy sauce mix and cook, stirring constantly, till thickened.
- Add in reserved cooked vegetables.
- Add in quartered tomatoes and heat through.
- Serve with warm cooked rice.
