Lemon crispy fish & chips
- 1 medium potato, cut into wedges
- 1 medium 200 g firm white fish fillet, cut into 6cm pieces
- 1/4 cup plain flour
- 1 egg white lightly whisked
- 1/4 cup corn flake crumbs
- 1/2 lemon cut into wedges
- preheat oven to 200oC.
- line 2 trays with aluminium foil.
- place the potatoes on one test, spray with oil and bake for 25 mins or until tender.
- meanwhile dip the fish pieces in the flour, egg white and crumbs.
- place on the other tray and bake for 15-20 mins or until tender.
- serve with lemon wedges and vegies
