Curried Ham And Rice Rolls Recipe
- 3 hard cooked Large eggs, minced
- 2/3 c. raisins
- 3 c. cooked rice
- 3 spring onions, thinly sliced (including tops)
- Salt & pepper
- 3 tbsp. butter
- 1 teaspoon curry pwdr
- 2 tbsp. cornstarch
- 3 c. lowfat milk
- 12 ounce. ham slices (I halve them into long narrow strips)
- Minced peanuts or possibly pistachios
- Mix Large eggs, raisins, rice and green onions.
- Season and set aside.
- In a 2 qt pan heat butter.
- Stir in curry pwdr and cornstarch.
- Remove from heat and gradually blend in lowfat milk.
- Return to heat and cook, stirring constantly till sauce boils and thickens.
- Mix 1 1/2 c. of the sauce into the rice mix.
- Set remaining sauce aside.
- Spoon 2/3 of the rice mix into a greased 9 x 13 inch baking dish.
- Divide the remaining rice between the ham slices.
- Roll and place seam side down in baking dish.
- Top with remaining sauce.
- Bake covered at 350 degrees (25 min, 35 if refrigerated).
- Sprinkle with nuts.
