Royal Zucchini Parmesan Recipe
- 1 pound grnd beef
- 2 onions, minced
- 2 tbsp. salad oil
- 1 c. grated Cheddar cheese
- 1 (8 ounce.) can tomato sauce
- 1 (6 ounce.) can tomato paste
- 1/4 teaspoon pepper
- 4 med. zucchini, sliced cross-wise, 1/4 inch thick
- 1 green onion, minced
- 1 bell pepper, minced
- 1 teaspoon salt
- 1 (10 ounce.) can Ro-Tel tomatoes and green chilies
- 1/2 teaspoon oregano
- 1/4 teaspoon garlic salt
- 1/2 c. grated Parmesan cheese
- Saute/fry grnd beef, bell pepper and onion in oil till meat is brown and crumbly.
- Add in Ro-Tel tomatoes and green chilies, tomato sauce, and tomato paste.
- Simmer for 10 min stirring occasionally.
- Blend in Cheddar cheese, oregano, salt, pepper and garlic salt.
- Add in zucchini.
- Simmer another 10 min.
- Put into an ungreased shallow 3 qt casserole and sprinkle with Parmesan cheese.
- Bake at 350 degrees for 45 min.
- Serves 6-8.
