A Scrumptious Open Sandwich

  1. Peel the shells and tails and devein the prawns.
  2. Mix the prawns with the preparation ingredients and rinse.
  3. Bring some water (not listed in the ingredients) to a boil in a small sauce pan and poach the prawns for 2 to 3 minutes.
  4. Drain and rinse.
  5. Tear the lettuce and rinse.
  6. Pat dry with kitchen paper.
  7. Slice the celery diagonally (remove the fibre if necessary).
  8. Slice the tomato and avocado, and sprinkle lemon juice over the avocado.
  9. Combine in a small bowl.
  10. Toast the bread.
  11. Drizzle a few drops of olive oil over the bread after toasting.
  12. Place the lettuce the celery the tomato on top of 5.
  13. Put the prepared prawns in the centre and arrange the avocado around them.
  14. Drizzle over top and serve.
  15. If you are hungry, add another slice of bread to make a proper sandwich.
  16. It may be messy when you eat it, but have a try.
  17. Use bread of you choice.
  18. I used a slice from a normal loaf of bread but I like pain de campagne best for this open sandwich.
