Spicy Cheese And Sausage Grits
- 3/4 cup grits
- 3 cup boiling water
- 6 tbsp (3/4 stick) butter
- 2 eggs, beaten
- 1 tsp salt
- 1/2 lb sharp cheddar cheese, finely grated
- 1 pinch cayenne
- 1/2 clove chopped garlic
- 1 oz mild green chiles, chopped (canned)
- 1 lb of your favorite sausage
- 1 paprika to taste
- Preheat oven to 350F.
- Cook grits in boiling water in a saucepan about 8 minutes all together.
- (To keep from spattering, reduce heat and simmer after 2 minutes.)
- In another pan, cook sliced or chopped sausage with garlic .
- Add butter, cheese, eggs, salt, cayenne, and chiles to grits.
- Add sausage mix to grits.
- Mix until well blended.
- Pour into a 9 X 13 inch pan or casserole dish.
- Sprinkle paprika on top.
- Bake uncovered 1 1/4 hours until crispy top forms.
