Bacon-Wrapped Stuffed Pork Tenderloin

  1. Heat oven to 450*.
  2. Make long slit in center of tenderloin running the length of the meat, stopping about 1/4 inch from edge.
  3. Spread open; pound flat.
  4. Spread stuffing on one half of tenderloin, leaving 1-inch border on long end.
  5. Spoon cranberries over stuffing.
  6. Fold other side of tenderloin over; wrap bacon diagonally around tenderloin, securing with toothpicks.
  7. Bake 30 minutes or until internal temperature reaches 140-145*.
  8. Let stand 5 minutes before slicing.
  9. Remove toothpicks before serving.
