Lobster Thermidor
- 1 lobster, boiled
- 2 tbsp. butter
- 1 sm. onion, finely chopped
- 1 tbsp. flour
- 1/2 cup dry white wine
- 1/2 cup clam juice
- 1 tbsp. sherry
- 1 tbsp. heavy cream
- 1 tsp. Dijon mustard
- 1/4 cup Parmesean cheese
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 tbsp. chopped parsley
- Cut lobster lengthwise in half, cutting completely through shell to make 2 pieces.
- Remove lobster meat from tail and claws and cut into 1 inch pieces.
- Scoop out shell, rinse well, drain, and reserve.
- In a small saucepan, melt butter over medium heat.
- Add onion and cook, stirring often until softened, 2-3 minutes.
- Add flour and blend well.
- Cook, stirring, 1 minute.
- Whisk in wine, clam juice, and sherry.
- Raise heat to medium high and cook, stirring often, until thickened and smooth, 2-4 minutes.
- Add cream, dijon, and half of parm.

- Remove from heat and add lobster pieces.
- Season with salt and pepper.
- Preheat broiler.
- Fill lobster shells with lobster and sauce.
- Sprinkle remaining parmesean cheese on top.
- Broil about 6 inches from heat until lightly browned, 3-5 minutes.
- Garnish with parsley and serve at once.
