Calla Lily Sandwiches

  1. In a bowl, mix Boursin cheese, cream cheese, finely-chopped walnuts, and peppers.
  2. Beat with mixer on medium speed until good and creamy.
  3. Use a 2 1/2 cookie/biscuit cutter and cut out 30-40 rounds from bread.
  4. Then with a rolling pin, roll each round so its about 1/8 inch thick.
  5. For each roll, spread about 1 teaspoon of the cream cheese mixture in the middle and to within 1/4 inch of the sides.
  6. Sprinkle a bit of paprika in the center.
  7. Roll the bottom of the round over and pinch to seal.
  8. It will look like a calla lily.
  9. Wash, peel and cut carrots into very thin matchsticks.
  10. Cut 2-inch pieces and stick a carrot into the center of each rolled sandwich.
  11. This looks like the stamen.
  12. I stick the blade ends of the green onions in the pinched end.
  13. These not only look pretty, they tasted delicious as well.
  14. This is a great recipe for a ladies luncheon, or any time you want an elegant appetizer.
