Fluffy Lemon Quinoa

  1. In a medium saucepan, heat oil over medium heat.
  2. Add quinoa and cook until lightly toasted, 3 to 4 minutes.
  3. Stir in chicken broth and salt.
  4. Bring to a boil; reduce heat to low, cover, and cook 15 minutes, or until broth is absorbed and quinoa is tender.
  5. Remove from heat and fluff with a fork.
  6. Let cool slightly and stir in parsley and lemon juice.
  7. Adjust seasoning to taste.
  8. Serve warm or at room temperature.
  9. For a great meal, serve with Pan-Roasted Salmon with Fresh Mint Sugar Snap Peas.
