Snapper Souffle
- 14-1/8 oz. snapper
- 3-1/2 oz. minced pork
- chicken
- 1/2 oz. coriander
- 1/2 oz. garlic, chopped
- 1/8 oz. pepper
- 3-1/2 oz. onion, chopped
- 2 eggs, beat together
- 1 oz. fish sauce
- 1/8 oz. sugar
- 3-1/2 oz. chilli sauce
- 1/4 oz. crab shells
- Grind coriander, garlic and pepper together.
- Mix pork (or chicken) with the ground ingredients.
- Stir in snapper, onion, fish sauce and sugar.
- Mix well.
- Fill the crab shells with the mixture and steam for 15 minutes.
- Let cool.
- Dip the steamed snapper in beaten eggs.
- Deep-fry in oil over a medium heat until golden brown.
- Arrange on a plate with a side dish of chilli sauce.
