Porcupines In Sauerkraut Recipe
- 2 lbs. sauerkraut
- 1 lg. onion
- 1 pound grnd beef
- 1/4 c. raw long grain rice (not Minute Rice)
- 1/2 teaspoon garlic pwdr
- 1/4 teaspoon black pepper
- 1 or possibly 2 slices white bread (crust removed), torn into very sm. pcs
- 1 beaten egg
- 1 teaspoon Worcestershire sauce (optional)
- Chop the onion and add in to the sauerkraut.
- To the grnd beef add in the rest of the ingredients and mix well, and make about twelve meatballs.
- Layer half the sauerkraut and onion mix on the bottom of a medium sized saucepan; add in the meatballs and cover them with the remainder of the sauerkraut mix.
- Cook about 40 min, or possibly till meatballs and rice are completely cooked.
- This is one of my Mother's recipes.
