Cranberry Orange Nut Pancakes

  1. In a large bowl, combine biscuit baking mix, milk, eggs, and sugar.
  2. Stir in dried cranberries, pecans, and orange zest; mix until well combined.
  3. Preheat a griddle or skillet over medium heat.
  4. Melt 1 tablespoon butter on griddle.
  5. Pour 1/4 cup batter per pancake onto hot griddle.
  6. Cook until pancakes begin to bubble and edges begin to set.
  7. Flip pancakes and cook 1 to 2 more minutes, or until golden, adding more butter as necessary.
