Cranberry Orange Nut Pancakes
- 2 cups biscuit mix
- 1 cup milk
- 2 eggs
- 1 tablespoon sugar
- 12 cup dried sweetened cranberries
- 12 cup chopped pecans
- 1 teaspoon orange zest
- butter
- In a large bowl, combine biscuit baking mix, milk, eggs, and sugar.
- Stir in dried cranberries, pecans, and orange zest; mix until well combined.
- Preheat a griddle or skillet over medium heat.
- Melt 1 tablespoon butter on griddle.
- Pour 1/4 cup batter per pancake onto hot griddle.
- Cook until pancakes begin to bubble and edges begin to set.
- Flip pancakes and cook 1 to 2 more minutes, or until golden, adding more butter as necessary.
