Evedine's Banana Nut Bread
- 1/2 teaspoon salt
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 cup vegetable shortening
- 1 1/4 cups bananas mashed
- 2 large eggs
- 1 1/4 cups walnuts
- 2 cups flour, all-purpose
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 cup sour milk or buttermilk
- Cream together sugar, shortening, eggs and flour.
- Add soda and buttermilk.
- Mix in salt and baking powder (add 1 drop lemon extract if desired) add mashed bananas and fold in nuts and vanilla.
- Bake about 35 minutes at 350F (180C) in greased and floured or papered pan.
