Rice Pancakes - Healthy and Deliecious

  1. In a large bowl, mash the rice up a little bit with a potato masher or with your hands.
  2. Then add flours, sugar, salt, baking powder, soda, milk, egg, and vanilla.
  3. Blend well.
  4. Fold in egg whites.
  5. Pour by 1/4 cup measure onto hot griddle coated with cooking spray.
  6. Flip when bubbling and cook until lightly browned on both sides.
  7. It made 22 small to medium pancakes.
  8. Enjoy!
