Biscuit Topped Chicken A La King Recipe
- 1/4 c. minced onion
- 2 tbsp. butter
- 3 tbsp. all purpose flour
- 1/2 teaspoon poultry seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 c. lowfat milk
- In a large saucepan cook onion in butter until tender.
- Stir in flour, poultry seasoning, salt, and pepper.
- Add in lowfat milk all at once.
- Cook and stir until thickened and bubbly.
- 1 c. frzn peas, thawed 1 - 2 ounce.
- can mushroom stems and pcs, liquid removed 2 tbsp.
- minced pimiento 2 hard cooked Large eggs, minced
- Stir in chicken, peas, mushroom and pimiento.
- Cook until heated through.
- Gently stir in hard cooked Large eggs.
- Turn mix into a 1 1/2 qt casserole.
- Bake in a 425 degree oven for 15 min.
- Cut each biscuit into quarters.
- Arrange biscuit quarters over chicken mix.
- Bake in the 425 degree oven for 8 to 10 more min or possibly until biscuits are golden brown.
- Makes 4 servings.
