Prawn Kebabs with Sweet Chilli

  1. Soak 12 wooden skewers in water for 15 minutes to prevent them from burning on cooking.
  2. Thread the length of the prawns on the skewers, starting at the tail.
  3. Grill or pan-fry the prawns over medium heat for 5 minutes or until cooked through.
  4. Serve dipped in a bowl of the combined mayonnaise and sweet chilli sauce and wrapped in a butter lettuce leaf, if desired.
