Tart Lemon Cheesecake
- 1/3 cup margarine or butter, melted
- 5 Tbsp. sugar, divided
- 2 cups sour cream, divided
- 1 cup milk
- 1 Tbsp. lemon juice
- 2 tsp. grated lemon zest
- lemon twists and mint sprigs, for garnish
- Mix graham cracker crumbs, margarine or butter and 3 tablespoons sugar; press on bottom and side of 9-inch pie plate.
- Prepare cheesecake filling according to package directions using 1 cup sour cream, milk, lemon juice and lemon peel.
- Spread in prepared crust.
- Blend remaining sour cream and sugar; spread over filling.
- Refrigerate at least 2 hours.
- Garnish with lemon twists and mint sprigs if desired.
