Portuguese Seafood Casserole

  1. Heat half the oil in a large frying pan.
  2. Saute pork, onions, tomatoes, cabanossi and garlic for 3 minutes.
  3. Remove to a plate.
  4. Heat remaining oil in same pan.
  5. Saute rice for 1 minute.
  6. Stir in water, wine and combined saffron and hot water.
  7. Simmer, uncovered, for 5 minutes.
  8. Add seafood and pork mixture.
  9. Simmer, covered, for 5 minutes, stirring occasionally.
  10. Simmer a further 5 minutes, uncovered.
  11. Stir through peas.
  12. Simmer for a further 5 minutes or until all liquid is absorbed and rice is tender.
  13. Serve casserole with a green salad and crusty bread.
