Blue Cheese Slaw
- 1 cabbage, outer leaves and base removed (white or red)
- 4 carrots, peeled
- 2 red onions, peeled
- 5 ounces blue cheese
- 34 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 4 teaspoons French mustard
- 2 garlic cloves, peeled and crushed
- 4 tablespoons half-and-half
- For the salad: finely chop/grate the vegetables by hand or in a food processor.
- Tip the contents into a large serving bowl and crumble in the blue cheese in small chunks.
- For the dressing: whisk together all the dressing ingredients in a small bowl or measuring jug, pour over the salad and toss to combine.
