Tsos Pulled Pork Tacos with Broccoli Slaw
- 1 cup Chicken Broth
- 1/4 cups Hoisin Sauce
- 3 Tablespoons White Vinegar
- 1/4 cups Low Sodium Soy Sauce
- 2 Tablespoons Brown Sugar
- 2 Tablespoons Garlic, Minced
- 2 Tablespoons Ginger, Minced
- 1 whole Pork Tenderloin
- 6 whole Tortilla Shells (I Used Whole Wheat)
- 1/2 cups Canola Or Vegetable Oil
- 1/4 cups Plus 1 Tablespoon Red Wine Vinegar
- 4 Tablespoons White Sugar
- 1/4 teaspoons Black Pepper
- 1 pinch Salt
- 1 bag Broccoli Slaw, 12 Ounce Bag
- 2 Tablespoons Fresh Cilantro, Chopped
- Mix together all of the pork tacos ingredients (everything except the pork and the tortillas) to make a sauce.
- Spray a crock pot with cooking spray, place tenderloin in crock pot and cover it with the sauce.
- Cook on low for at least 6 hours, but this can be cooked for much longer, it will be okay on low until you are ready to eat.
- When you are ready to serve, make the slaw.
- Combine the oil, vinegar, sugar, pepper and salt.
- Pour over the broccoli slaw and cilantro.
- Mix to combine, set aside.
- Pull apart the pork (do this in the crock pot with tongs or two forks).
- Assemble tacos by putting pork into a tortilla first, then topping with the slaw.
