Creamy Bow Ties With Bacon, Tomatoes and Peas

  1. Prepare farfalle (bow tie pasta) according to package directions.
  2. In a large pan heat olive oil and add bacon strips.
  3. Crisp well and break them up.
  4. Add onions, garlic, bay leaf and mushroom and saute until soft.
  5. Add salt, pepper and tomatoes.
  6. Simmer on low for about 15 minutes.
  7. Remove from heat and stir in the frozen peas.
  8. Return to heat and add marscapone and bring to a bubble.
  9. Taste and adjust seasoning, if needed.
  10. Mix pasta into sauce.
  11. Just before serving, add basil to the pasta and mix through.
  12. Healthier Ideas: Try dropping the bacon to 2 slices and omit oil.
  13. Variation: Consider dropping the bacon and oil altogether, then add some type of pork to create a hearty, one-dish meal.
