Mexi Bowl

  1. Place beans in a pot with a 1/4 cup water and all seasonings.
  2. Stir and simmer for 5 minutes until softer.
  3. Divide rice in two bowls.
  4. Optional: To make a more complete meal you can add a vegetable.
  5. I added chopped spinach and placed it between the rice and beans.
  6. Top with beans and cilantro
  7. Top with tortilla chips.
  8. Drizzle on sauce.
  9. Top with cheese.
  10. Heat in microwave for 1 1/2 minutes.
  11. Put a dollop of guacamole on top.
  12. Option: Add a dollop of sour cream
