Microwave Low Cal Lasagna Casserole

  1. Break up lasagna noodles into bite size pieces; boil until al dente.
  2. Brown turkey sausage; drain if needed.
  3. Add spaghetti sauce & Italian seasonings to turkey in skillet.
  4. Simmer to blend flavors.
  5. In a small bowl, mix together ricotta cheese, egg, dash of salt & Italian seasoning to taste.
  6. Stir cooked lasagna noodle pieces into turkey mixture.
  7. Spray 11 X 9 microwave casserole dish with no stick spray.
  8. Spread ricotta mixture evenly into casserole dish.
  9. Sprinkle with 1/3 of the mozzarella cheese.
  10. Spread turkey mixture over cheese mixture.
  11. Microwave, covered tightly with microwave safe plastic wrap, on high for 8 minutes - turning once if microwave does not have turn table.
  12. Sprinkle with remaining mozzarella & with Parmasan if desired.
  13. Microwave, uncovered approximately another 2- 3 minutes until warmed through & cheese is melted.
  14. Let sit 5 - 10 minutes before cutting.
