Lentil Ground Beef Alternative for Veggies
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 1 large carrot, finely chopped
- 3 stalks celery, finely chopped
- 4 12 ounces red lentils
- 1 (7 ounce) can tomatoes
- 2 12 cups vegetable stock, made with a stock cube
- 1 tablespoon soy sauce
- 1 teaspoon dried herbs
- salt & freshly ground black pepper
- Heat the oil in a large saucepan and cook the chopped vegetables for about 5 minutes over a medium heat until lightly coloured.
- Add the remaining ingredients and bring to a simmer.
- Cover and cook for about 20 minutes until tender and serve as wished.
