Pimms Cup With Muddled Cucumber

  1. Make a simple syrup: in a small pan, heat sugar and 1 cup water; boil until sugar is melted.
  2. Cool.
  3. (It keeps in the refrigerator for weeks.)
  4. In a cocktail shaker, muddle the cucumber.
  5. Add the Pimms, gin, lemon juice and 3/4-ounce simple syrup.
  6. Shake.
  7. Strain into a Collins glass filled with ice.
  8. Top with seltzer or sparkling water.
  9. Garnish with lemon wedge and mint sprig.
