Sweet Potato Chocolate Chip Mini Muffins

  1. Preheat oven to 350F
  2. Cut sweet potatoes into large pieces.
  3. In a medium saucepan, cook in boiling water until tender when pierced with a fork.
  4. Drain and cool.
  5. Remove skin and puree in food processor or mash thoroughly with a fork.
  6. This should yield 1 1/4 cups sweet potato puree.
  7. In a large bowl, combine flour, sugar, cinnamon, salt and baking soda.
  8. In another bowl, mix together oil, sweet potato puree and eggs.
  9. Make a well in dry ingredients and stir in sweet potato mixture.
  10. Fold in chocolate chips.
  11. Spoon into mini muffin tins lined with paper cups.
  12. Fill to top.
  13. Bake 15-20 minutes.
  14. Cool on racks.
