Savoy Cabbage with Almonds & Raisins (vegan)
- 1/4 savoy cabbage, cored and big veins removed and leaves chopped into inch square pieces
- 1/2 tbsp olive oil
- 1 tbsp flaked almonds
- 2 tbsp raisins
- 1 salt and black pepper
- Heat the oil to medium, add the almonds and stir until browning a little.
- Add the raisins, cabbage and a splash of water
- Put the lid on the pan and cook, shaking the pan and stirring occasionally for 5 minutes
- Season well with salt and black pepper before serving.
