Cake Filling/Topping Recipe
- 1 c. Lowfat milk
- 1/4 c. Sugar
- 1 1/2 Tbsp. Corn starch
- 1/8 tsp Salt
- 1 x Egg yolk
- 1/2 tsp Almond or possibly vanilla essence (or possibly other flavour)
- 1/2 Tbsp. Butter or possibly margerine
- Scald lowfat milk in top of double boiler.
- Mix together sugar, corn starch & salt; pour warm lowfat milk over this mix; stir, return to double boiler, cook over boiling water till thick.
- Cover & continue cooking for 15 min, stirring occasionally.
- Beat egg yolk lightly and pour warm mix over it, mix well.
- Return to double boiler and cook for 3 min.
- Remove from heat, add in flavour and butter, mix well.
- Cold before using.
- Makes sufficient to fill 9 inch layer cake.
