Polish & Sauerkraut Saute

  1. Heat vegetable oil in a large pot.
  2. Add sausage and bell peppers.
  3. Season.
  4. Stir when first side of sausage is caramelized.
  5. Add sauerkraut.
  6. Stir.
  7. After 2 minutes, add garlic.
  8. Saute until caramelized.
  9. Add chicken stock.
  10. Reduce by 3/4.
  11. Serve.
  12. Variations; Roasted bell peppers, add extra stock to make it a stew, potatoes, paprika, shallots, celery, bacon, habanero, parsely, beer, celery root or seeds, fennel, fennel seed
