Papaya-Ginger Smoothie
- 1 large papaya (Mexican or Solo, about 1 pound), peeled, halved lengthwise, seeds removed, cut into 1/2-inch dice
- 1 cup ice cubes
- 2/3 cup plain low-fat yogurt
- 1 tablespoon finely chopped peeled fresh ginger
- 1 tablespoon honey
- Juice of 2 lemons
- 16 fresh mint leaves, plus 4 sprigs for garnish
- Puree first 6 ingredients in a blender.
- Thin with water as necessary.
- Blend in mint leaves.
- Divide among four glasses.
- Garnish with mint sprigs; serve.
