Frutta e Vino -- Fresh Fruits in Sauterne Wine

  1. Use the fruits listed in the first column or any other combination of fruit that is at its best for the season.
  2. Make balls of all the melons.
  3. Rinse, drain and hull the strawberries, do not cut.
  4. They will lose their color if you do cut them.
  5. Rinse, drain and pick over the blueberries.
  6. Rinse grapes, dry with paper towels and pick off the stems.
  7. Peel oranges and grapefruit, removing as much of the bitter, white pith as possible.
  8. Rinse and core the apple, but do not peel, it will darken.
  9. Slice the apple very thinly.
  10. Peel the peaches, pit them and slice them thin.
  11. Rinse the nectarine, pit them and slice them.
  12. Do not peel.
  13. Combine all prepared fruits in a very large bowl.
  14. There will be at least 14-15 cups of fruit.
  15. Pour the sauternes over the fruit.
  16. Make sure you have enough Sauternes to cover all the fruit.
  17. Stir to coat all the fruit.
  18. Cover and refrigerate at least 3-4 hours but preferably over night.
  19. Before serving peel and slice the bananas and mix in.
