Rosy As a Poesy Cake
- 2 cups all-purpose flour
- 18 cup granulated sugar
- 23 cup cocoa powder
- 1 12 teaspoons baking soda
- 12 teaspoon baking powder
- 12 teaspoon ground cinnamon
- 18 teaspoon salt
- 1 cup milk (2% preferred)
- 12 cup ketchup
- 12 cup shortening
- 1 teaspoon vanilla
- 2 eggs
- In a large mixing bowl combine flour, sugar, cocoa, baking soda, baking powder, cinnamon & salt.
- Add milk, ketchup shortening and vanilla.
- Beat at low speed with electric mixer until 'just' combined.
- Add the eggs and beat at mediumn speed for 2 minutes.
- Spread batter evenly in greased and (if desired - floured) 9x13 baking pan.
- Bake in preheated 350degree oven, 30-35 minutes or until cake tester inserted in the centre comes out clean.
- Cool and then frost with your favourite chocolate frosting or (when cake is completely cooled off) dust with confectioners sugar.
- Chocolate or vanilla frosting is recommended.
