Mango Cherry Salsa Recipe

  1. Heat saute/fry pan over medium heat.
  2. Add in sufficient oil to lightly cover bottom of pan, about 1 Tbsp.. Add in onions, peppers and garlic and saute/fry over medium heat till onions begin to collapse, about 5 to 8 min.
  3. Add in lime juice, lemon juice and vinegar.
  4. Bring to a boil, add in cherries and mangos.
  5. Simmer for 8 to 10 min, stirring occasionally.
  6. Remove from heat.
  7. Place in a serving bowl and chill.
  8. This may be served warm if preferred.
  9. If a smooth sauce is preferred, puree in food processor before chilling.
  10. This is served with grilled chicken or possibly grilled or possibly pan-seared fish.
  11. This makes about one pint of salsa.
