Rockin' Rice Salad
- 1 cup uncooked rice (white or brown)
- 1 1/2 tsp Italian vinegar and oil salad dressing
- 1 1/2 tsp water
- 5 tbsp vegetable/olive oil
- 3 tbsp vinegar (whatever kind you choose)
- 1 tbsp soy sauce (I used reduced sodium)
- 1/2 tsp sugar (optional)
- 1 (8 ounce) bag baby spinach leaves
- 1 cup chopped celery
- 1/2 cup sliced green onions (1 bunch) (I'm not a fan of green onions, so I use white onions chopped to taste instead)
- 1 1/2 cup chopped green olives
- 12 slice bacon, cooked and crumbled
- Cook the rice according to the package directions.
- In a medium serving bowl, combine the Italian vinegar and oil with the water and let stand for 5 minutes.
- Add the oil, vinegar, soy sauce and sugar (if using) and mix well.
- When the rice is done, let cool for 5 to 10 minutes and then add to the bowl with the dressing.
- Mix well.
- Cover and refrigerate until ready to serve.
- Just before serving, stir in the spinach, celery, onions, olives and bacon.
