Chile-Cheese Logs

  1. Process first 10 ingredients in a food processor until smooth, stopping to scrape down sides.
  2. Divide cheese mixture into 2 equal portions; shape each portion into an 8-inch log.
  3. Combine pecans and cilantro.
  4. Roll cheese logs evenly in pecan mixture; wrap in plastic wrap.
  5. Cover and chill at least 2 hours.
  6. Serve with assorted crackers.
