Baked Caramelised Banana Cheesecake

  1. Combine biscuit crumbs and butter then press into the base of a greased 22cm springform pan; chill.
  2. Beat Philly* and sugar using an electric mixer until smooth.
  3. Beat in the eggs, one at a time, until smooth.
  4. Add the cream and lemon juice and continue beating until well combined.
  5. Pour half the mixture into the prepared base.
  6. Add banana slices, top with remaining mixture and sprinkle top with extra brown sugar.
  7. Bake at 150C 45 minutes or utnil just wobbly in the centre.
  8. Allow to cool in oven with door ajar.
  9. Serve chilled or at room temperature, garnished with extra sliced banana.
