Terrific Tuna
- 4 medium tomatoes
- 1/2 tsp. salt
- 1 can tuna packed in water
- 1 small onion
- 1/2 stalk celery
- 2 tbsp. pickle relish (Sweet or dill, you choose.)
- 2 tbsp. mayonnaise
- 2 tbsp. mustard
- 1 tsp. Dill
- Salt and pepper to taste
- 2 tsp. bread crumbs
- Preheat the oven to 350 degrees.
- Carefully cut a 2-inch hole out of the stem end of each tomato with the paring knife.
- Scoop the seeds out of the tomatoes with the spoon.
- Sprinkle a pinch of salt in each tomato, and let them rest upside down on the paper towels while you make the tuna salad.
- Open the tuna with the can opener, and drain.
- (Your cat will appreciate the tuna water as a special treat.)
- Put it in the mixing bowl, and then add the diced celery and diced onion to the bowl.
- Add the relish, the mayonnaise, the mustard, and the dill.
- Stir it all up and then have a taste.
- Add just enough salt and pepper to make it perfect to your taste buds.
- Fill the tomatoes with tuna salad, top with the bread crumbs, and put them in the baking dish.
- Bake for 15 to 20 minutes.
- (Remember to use potholders when taking the dish out of the oven.)
