Japanese Carrot-Ginger Dressing
- 3 medium carrots, peeled and chunked
- fresh ginger
- 1 shallot, minced
- 3 tablespoons rice vinegar
- 14 cup canola oil
- 1 tablespoon dark sesame oil
- 1 tablespoon sugar
- 4 teaspoons miso
- 2 teaspoons mirin
- 3 tablespoons water
- Run everything through food processor.
