Sourdough English Muffins Recipe

  1. Mix starter and buttermilk.
  2. Add in sifted flour, 4 Tbsp.
  3. cornmeal, soda and salt.
  4. Stir well.
  5. Turn out onto floured board.
  6. Knead till smooth and elastic adding more flour if needed.
  7. Roll dough to 3/8 inch.
  8. Let rest a few min.
  9. Cut dough into muffins.
  10. Sprinkle sheet of wax paper with half of remaining cornmeal, put muffins on and sprinkle the rest of cornmeal over top.
  11. Cover and let rise till light (about 45 to 60 min).
  12. Bake on medium, lightly greased grill about 30 min.
  13. Turn often.
  14. Cold, split, toast and serve with butter.
  15. Makes 12 to 14 muffins.
