Asparagus Frittata Casserole
- 3 large eggs
- 1 tsp salt
- 1/2 cup shredded monterey jack or cheddar cheese
- 1 1/2 cup milk
- 1 box (10 ounces) frozen asparagus spears, thawed
- Preheat oven to 400F.
- In medium bowl, beat eggs.
- Add milk and salt; blend well.
- Pour mixture into greased 9 X 9 inch baking pan; top with asparagus.
- Sprinkle with cheese.
- Bake 15 minutes or until egg mixture is set.
