Thai Pickled Cucumbers

  1. In a small saucepan, bring the vinegar, sugar and water to a boil.
  2. Simmer until the sugar dissolves.
  3. Place the cucumber quarters in one large, tall glass jar.
  4. Add the star anise.
  5. Pour the hot syrup into the jar.
  6. Seal.
