Thai Pickled Cucumbers
- 1 cup white distilled vinegar
- 1/3 cup sugar
- 1/2 cup water
- 1 pound cucumber, ends removed, deseeded and cut into quarters lengthwise
- 1 star anise pod
- In a small saucepan, bring the vinegar, sugar and water to a boil.
- Simmer until the sugar dissolves.
- Place the cucumber quarters in one large, tall glass jar.
- Add the star anise.
- Pour the hot syrup into the jar.
- Seal.
