Country Bean BBQ
- 1 (16 ounce) can lima beans
- 6 slices bacon, diced
- 12 cup sliced onion
- 12 cup diced celery
- 1 garlic clove, minced
- 1 cup ketchup
- 1 (16 ounce) can red kidney beans, drained
- 12 teaspoon Tabasco sauce
- Drain lima beans; reserve 1/2 c liquid.
- In large skillet cook bacon until browned.
- Drain all but 1 tablespoons bacon fat from skillet.
- Add onion, celery and garlic; cook 5 minutes or until tender.
- Stir in ketchup, lima beans, reserved lima bean liquid and kidney beans; mix gently.
- Simmer uncovered 20 minutes; stir occasionally.
- Stir in Tabasco sauce.
