Cottage Cheese Pancakes
- 1 12 cups all-purpose flour
- 14 cup light brown sugar
- 1 12 teaspoons baking powder
- 14 teaspoon baking soda
- 14 teaspoon salt
- 1 cup cottage cheese
- 1 cup milk
- 2 large eggs
- 3 tablespoons unsalted butter, melted
- 12 teaspoon vanilla or 12 teaspoon orange extract
- Whisk the dry ingredients together.
- Whisk the cottage cheese together with the remaining wet ingredients.
- Combine the wet into the dry and mix just until incorporated.
- The batter will be very thick and lumpy.
- Heat your griddle and lightly grease it if necessary.
- Use 1/4 c.
- batter per pancake, allowing plenty of space for spreading.
- Cook the pancakes until light brown on one side, flip and cook the other.
- Serve immediately with maple syrup or applesauce.
