All-Day Burrito

  1. Drain salsa in mesh strainer; set aside.
  2. Whisk together egg, egg whites and cilantro.
  3. Season to taste with black pepper, and set aside.
  4. Coat 8-inch skillet with cooking spray, and heat over medium-high heat.
  5. Cook soy bacon 2 minutes, turning once.
  6. Set aside; wipe out pan.
  7. Re-spray pan, and return to medium heat.
  8. Pour in egg mixture; as it begins to set, lift and tilt pan, lifting cooked edges and letting liquid part run underneath.
  9. When almost completely set, sprinkle on soy cheese.
  10. Cook about 2 minutes, or until cheese is melted.
  11. Slide pancake onto plate.
  12. Place bacon strip down center.
  13. Spoon salsa on bacon.
  14. Fold over sides of pancake.
  15. Serve immediately, or let cool and eat at room temperature.
