Salmon Crunch Pie
- 40g butter
- 1 large onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 red and 1/2 green capsicum, chopped
- 1/3 cup plain flour
- 375ml milk
- 130g can corn kernels, reserve juice
- 1/3 cup KRAFT* Tartare Sauce
- 420g can red or pink salmon Walmart Supercenter 1 lb For $5.00 thru 02/14
- 3 hard boiled eggs, roughly chopped
- 2 cups cooked spiral pasta
- 100g grated tasty cheese
- 3/4 cup crushed RITZ* Crackers
- Melt the butter in a large saucepan saute the onion and pepper for 5 minutes, stir in the flour and cook for 1-2 minutes.
- Stir in the milk gradually then bring to the boil, stirring until thickened.
- Add the corn and its juice, sauce and salmon; simmer for 5 minutes.
- Fold through the egg and pasta and spoon into a 2 litre baking dish.
- Top with the cheese and biscuits and bake at 180 degrees C for 20-30 minutes or until crunchy and golden.
