Curry Lamb/ Goat Which you can gain access to
- 3 lb Goat meat
- 2 tbsp curry powder
- 3 pinch Black pepper
- 1 tsp Salt
- 5 small All spice
- 1 Onion roughly chopped
- 4 clove garlic roughly chop 3 and set aside 1 to caramelize in the oil
- 1 Scotch bonnet pepper or equivalent
- 2 Stalks scallions
- 1 small tomato chopped
- 1 tbsp Vegetable oil
- 2 small Carrot
- 1 Green pepper
- 5 oz Chopped Irish potatoes
- 1 oz Ginger grated or chopped
- 1 tsp Meat tenderizer or seasoning salt
- 3 cup Water
- Thaw meat until meat can be easily sliced
- Remove all saturated fats and cut meat in the bite size pieces
- Wash the meat in lime juice and vinegar
- In a deep bowl add your meat, your curry powder, salt, black pepper, meat tenderizer all spice, & ginger.
- In a deep skillet, heat the hot and add 1 clove of garlic and 1/4 teaspoon curry powder to the oil until it caramelize
- Add you meat all at once and give it 3 good stir and cover.
- Allow this to cook until all the water is dried out from the meat and it starts to caramelize.
- Remove from deep skillet into a pressure cooker.
- Had all remaining ingredients except the carrot, irish and green peppers and pressure for 25-30 minutes on medium heat.
- Once the curry goat is pressured had your carrots, Irish and green pepper, let simmer for 5 minutes.
- Serve with steamed white rice, peas & rice or roti
